Dinner for One

What do you cook when you are eating at home alone?
Because my life is usually bustling with my kids' activities, work, friends & family, if I get the chance to have a meal home alone, I often have a bowl or cereal. I have also found that popcorn is nice with a bottle of Cabernet.

But there is something very healthy about actually cooking food just for yourself. I confess I haven't done that in a while, but aren't you worth your own effort?

If I do really cook for myself, I will most likely fix pasta with a variety of veggies and cheese. If I have chicken, or some other leftover meat, I might add that. I like spicy food too, so I grind some red pepper on top.

If you treat yourself with your own culinary skills, what do you have?

AM,

Cereal and Popcorn ( oh come on !! ) you are getting your grains and fiber but little else. You should consult the USDA Food Pyramid -- where are your dairy meats and vegetables ? and in the suggested right proportions too !!!

A trick I have learned is to prepare a big pot of stew (all 4 foodgroups ) on a weekend and then pour it into small glad containers for either refrigeration or freezing. Then when you get hungry, simply microwave.

I'm glad I'm not your mother, I simply would not stand for what you are doing to yourself (a slow form of metabolic torture )

Another option for you is to join one of those prepared food co-ops like "My Girlfriends Kitchen" etc.

Just because your single does'nt
mean you should stop taking care of yourself.

Cereal with milk - there's my dairy. and "some kind of meat" on my salad or in my pasta counts.

I actually had some delicious grilled tuna recently with squash.

Super Suppers is going to host an event for us in October. That should help me!

I find it really hard to fix a meal for myself at times. If I get home real late or don't have much....I resort to fixing an omelet usually with turkey bacon or chicken, cheese and maybe some diced tomato if I have one. Now that summer is here I tend to slice some fruit on the side.

My newest quick meal is that ready made chicken slices on a salad with goat cheese, dried cranberries, some chopped pecans, and a rasberry vinaigrette.

I have resorted to cereal before for dinner though.

I have a better idea. we should start a dinner club for singles. I can do a main dish and those who come to visit can bring a side dish, a salad, bottle of wine or some kind of real a decadent dessert.

A dinner party with true conversationalists -- sounds like real a good eve to me.

I was single not too long ago. Or so it seems. There were a group of us in a church in Columbia, where I played music and led worship, that would go out afterward to have lunch. Once, we did a house hosting evening where the first house did appetizers, the second the main course, and the last stop hosted dessert and live entertainment. THAT was fun!

Welcome Pete! Folks, let me introduce my favorite photographer. He took my coffee cup picture and my more grown-up photo in the magazine, although not the skydive one.

A progressive dinner would be fun!

Pete... great portraits of AM!. I got my start in photography, would enjoy seeing how things are done in the digital age. :-) Not having to process your own Ektachrome has got to make life easier!

Mark, Digital is amazing! I earned my degree opening film canisters. I love what I can do now! Thank you for the nice compliments on Ann's photographs. She photographs well, which makes it easy. And, yes Mike, she drinks her coffe black indeed!
